  • 6 cups mixed salad greens, such as spring mix or arugula
  • 1 large red apple, thinly sliced
  • 1/2 cup pecans, lightly toasted

  • 1/4 cup crumbled goat cheese
  • For the Balsamic Vinaigrette:
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon maple syrup or honey
  • 1/4 teaspoon salt
  • Pinch of black pepper

  • Prepare the Greens: The secret starts here! Wash your mixed greens thoroughly under cool water. The most crucial step is to dry them completely. Use a salad spinner if you have one until the greens are absolutely free of excess water. If you do not have a spinner, gently pat them dry with paper towels. Any residual water will prevent the dressing from clinging properly and lead to a soggy salad.
  • Prevent Apple Browning: Thinly slice your red apple. To keep them perfectly crisp and prevent browning, immediately immerse the slices in a bowl of cold water with a squeeze of lemon juice (about 1 tablespoon per 2 cups of water) for 5 minutes. Drain well and pat the apple slices completely dry with paper towels.
  • Toast Pecans (Optional for extra crunch): In a dry skillet over medium-low heat, toast the pecans for 3 to 5 minutes, stirring frequently, until fragrant. Let them cool.
  • Whisk the Vinaigrette: In a small bowl, combine the extra virgin olive oil, balsamic vinegar, maple syrup or honey, salt, and black pepper. Whisk vigorously until well combined.
  • The Perfect Toss (This is the game changer!): In a large salad bowl, add your perfectly dry mixed greens. Pour about half of the prepared vinaigrette over the greens. Using your clean hands or large salad tongs, gently but thoroughly toss the greens. Ensure every single leaf is lightly coated. The goal is a light, even sheen, not a pool of dressing.
  • Assemble and Finish: Add the dried apple slices, toasted pecans, dried cranberries, and crumbled goat cheese to the bowl. Drizzle the remaining vinaigrette over the salad as needed, being careful not to overdress. Toss once more, very gently, to distribute the toppings and ensure everything is lightly coated with that delicious dressing. Serve immediately and enjoy the perfect balance of flavors and textures!
